2 tablespoons vegetable oil
1 medium onion, finely chopped
6 eggs, mixed
2 cups cooked rice
1 large mango, peeled and cut into 1/2” cubes
4 oz dry smoked salmon
2 teaspoon Soy sauce
1 tablespoon Aji-Mirin
1 tablespoon Nori Komi Furikake, or other seaweed rice seasoning.
Over high heat in a wok, heat the vegetable oil until hot. It should be shimmering, but not smoking.
Add chopped onions and continuously flip them until they are translucent, 1 to 2 minutes. Be careful when adding the onions. If they are damp they may cause the oil to splatter,
Add eggs and continuously flip them until start to loose their sheen, but before they are dry
Lower the heat to medium and add the rice. Mix the rice, eggs and onions. This will probably require breaking the clumps of rice and eggs into smaller pieces. Cook for one minute.
Mix in the mangoes and salmon. Cook for one additional minute.
Turn off the heat.
Sprinkle the soy sauce, Aji-Mirin, and Nori Komi Furikake over the salmon fried rice and toss to combine.
Serve as a main dish for four people or as a side dish for 8 people.
