Crispy Noodle Stir-Fry Tacos

In the fast-paced sprawl of Seattle, sometimes you need to combine the best of all worlds—like savory stir-fry with the crunch and convenience of a taco. These Crispy Noodle Stir-Fry Tacos are a perfect fusion of texture and flavor, combining stir-fried meat, veggies, and crispy noodles all wrapped in a handheld taco that won’t get soggy. Perfect for when you’re on the move but still want to eat like a kingpin.

Ingredients

4 oz thin noodles (ramen, soba, or rice noodles)

1/2 lb beef, pork, or chicken, thinly sliced

1 tablespoon vegetable oil, divided

1 small onion, thinly sliced

2 cloves garlic, minced

2 green onions, chopped, white and greens parts separated

1 bell pepper, thinly sliced

1 teaspoon fresh ginger, minced

2 tablespoons soy sauce

8 Small tortillas (flour or corn)

Add-ons:

1/2 cup carrots, julienned

1/2 cup Jicama, julienned

1/2 cup Pickled daikon radish, julienned

1 bunch Thai Basil

1 Lime, cut in quarters

Hoisin sauce, sriracha, Spicy mayo (mix mayo with sriracha), or soy sauce, for drizzling

Optional:

Pickled ginger

Instructions

Cook the Noodles according to the package instructions. Once cooked, drain and place on a rack so tht the excess water can drain off.

Heat 1/2 tablespoon of vegetable oil in a hot skillet or wok over medium-high heat.

Add the thinly sliced meat and stir-fry until the meat is cooked through and nicely browned, then remove and set aside.

Add the onions, garlic, and the white portion of the green onions to the pan. Cooking until the onions are translucent.

Add the peppers, ginger, and soy sauce. Continue cooking until the peepers are crisp-tender. Remove and set aside the stir-fry mix.

In the same skillet, heat the remaining 1/2 tablespoon of oil.

Add the noodles in a single layer and pan-fry them until they get crispy edges, flipping occasionally to avoid sticking. Using the side of a spatula, cut the noodles into 8 pieces.

Warm the tortillas in a dry skillet or microwave.
